Shared with the University of Catania, the following research activities are carried out there: chemical-physical characterisation (pH, conductivity, colour, dry matter); extraction and analysis of phenolic compounds (e.g. phenolic acids and flavonoids) and antioxidant capacity; analysis of carbohydrates and inorganic anions and cations.
